Triterpenes, the compounds prominent in species like reishi, are alcohol-soluble. A single solvent can only release one group efficiently. Extract with hot water alone and you capture the beta-glucans but leave the triterpenes behind; extract with alcohol alone and you get the triterpenes but miss much of the beta-glucan content.
